I've seen some videos where guys have use aluminum blocks to quench blades, like big heat sinks. Has anyone seen or done this before? Is there any big benefit to this dry quench?

It's used for air hardening steels like 440C and D-2.  It wouldn't work for oil or water quench steels.

When this method is used you'll normally be using an electric furnace to heat the steel.  You'll also wrap the blade in stainless foil to minimize scaling.  Usually this process is used to cool the steel faster than moving air but not as fast as oil.  It also tends to minimize warping.
